Restaurant Manager Matteo Zappile leads the team of five carefully selected staff members who, with the utmost professionalism, guide and accompany the guests of Il Pagliaccio on an unforgettable journey of the senses.

Since 2011, the wine cellar has been headed by Matteo Zappile, today flanked by Luca Belleggia who, as a result of his curiosity and passion for this world, knows how to select labels from all around the globe, focusing on those that are “new” and well-established.
The wine list now has 1300 different wines to accompany Chef Genovese’s dishes.
